Members recipes

These two recipes come from a couple of our group members, Stacey and Linda both vegetarians and both great moms. Linda is also a stepmom. How these two kind ladies find time to parent so well and create these wonderful tastes is far beyond me!

Stacey’s Orange Glaze/Marinade

Orange Marmalade (app. 1/2 C)
Worschire Sauce (app. 1/4 – 1/2 C)
Orange Juice (app. 1/4 C)
Fat Free Catalina Dressing (app. 1/4 C)

As stated on each, these are just approximate measurements. Start with a small amount and add each to taste. This is great to simmer tofu, seared fish, or probably any other meat.

Linda’s Vegan Mexican Pizza
1 can Rotel (drained)
1 small can of sliced black olives
1 boxed pizza crust
olive oil or veg oil to knead pizza dough
1 package of queso style soy cheese (in produce aisle)
1 bell pepper
1/8 th of an onion
1 pkg shredded lettuce
salsa (on top, unheated, to garnish)

Make the pizza crust as directed, except, put on Rotel, onions, and bell pepper;
heat in 400 degree oven for 8 minutes;
remove from oven …
add cheese (and any other toppings your family prefers);
return pizza to oven until soy cheese is bubbly (do not overcook the cheese!)
NOTE 1: for a nice crispy crust, second time place pizza directly on oven rack
NOTE 2: “Of course, Linda would never be offended if you added meat to her ‘vegan’ pizza!”
